How to make Beet and Goat Cheese Salad

Beet and Goat Cheese Salad is a delightful and colorful dish that combines the earthy sweetness of beets with the tangy creaminess of goat cheese. Here’s a simple recipe to prepare this flavorful salad:

  • 3-4 medium-sized beets (red or golden)
  • 4 oz goat cheese (crumbled or sliced)
  • 4 cups mixed salad greens (such as arugula, spinach, or mixed baby greens)
  • 1/4 cup walnuts or pecans (toasted and chopped)
  • 2-3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

  1. Prepare the Beets:
    • Preheat your oven to 400°F (200°C).
    • Wash the beets thoroughly, removing the stems and leaving the skins on.
    • Wrap each beet individually in foil and place them on a baking sheet.
    • Roast for about 45-60 minutes, or until the beets are tender when pierced with a fork.
    • Once done, remove the beets from the oven and let them cool. Then, using a paper towel, rub the skins off the beets. Slice the beets into rounds or cubes.
  2. Make the Dressing:
    • In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Adjust the seasoning to your taste.
  3. Assemble the Salad:
    • On a serving platter or individual plates, arrange the mixed salad greens.
    • Place the sliced or cubed beets on top of the greens.
    • Sprinkle the crumbled or sliced goat cheese over the beets.
    • Add the toasted and chopped nuts on the salad.
  4. Drizzle the Dressing:
    • Just before serving, drizzle the prepared dressing over the salad. You can either toss the salad with the dressing before serving or serve the dressing on the side.
  5. Serve:
    • Serve the beet and goat cheese salad immediately.

Additional Tips:

  • You can also add other ingredients like sliced oranges, apples, or pears to the salad for extra flavor and texture.
  • Feel free to adjust the quantities of the ingredients according to your taste preferences.
  • If you prefer, you can use different types of cheese, such as feta or blue cheese, to complement the beets.

This Beet and Goat Cheese Salad is not only visually appealing but also offers a wonderful combination of flavors that make it a fantastic choice for a light and flavorful meal. Enjoy!
