How to make BBQ Ribs

Making BBQ ribs is a delicious and satisfying process. Here’s a general guide on how to make flavorful BBQ ribs:

  • 2 racks of pork baby back ribs or St. Louis-style ribs
  • Your choice of dry rub or marinade
  • BBQ sauce

For the dry rub:

  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  1. Prepare the ribs:
    • Remove the membrane from the back of the ribs if it’s still attached. This helps the seasonings penetrate better.
    • Rinse and pat dry the ribs with paper towels.
  2. Season the ribs:
    • In a small bowl, mix the ingredients for the dry rub together. Apply the dry rub generously to both sides of the ribs, covering them completely. You can do this a few hours before cooking and let the ribs sit in the refrigerator to absorb the flavors.
  3. Choose your cooking method:
    • Oven method: Preheat your oven to 300°F (150°C). Wrap the seasoned ribs in aluminum foil and place them on a baking sheet. Bake for 2.5 to 3 hours or until the meat is tender.
    • Grill method: If you’re grilling, set up your grill for in-direct heat. Place the ribs on the grill, away from the direct flames. Cover and cook for 2 to 2.5 hours, turning occasionally.
  4. Apply the BBQ sauce:
    • During the last 30 minutes of cooking, brush the ribs generously with your favorite BBQ sauce. Apply multiple coats to build a sticky, flavorful glaze.
  5. Check for doneness:
    • The ribs are ready when the meat has shrunk back from the bones and you can easily pull the meat apart with a gentle tug. Optionally, you can use a meat thermometer; the ribs are done when the internal temperature reaches about 190°F (88°C).
  6. Rest and serve:
    • Let the ribs rest for a few minutes before slicing. This allows the juices to redistribute. Cut the ribs into individual portions and serve with extra BBQ sauce on the side.
