How to make Biscuits and Gravy

Biscuits and gravy is a classic Southern dish that consists of fluffy biscuits smothered in a creamy sausage gravy. Here’s a simple recipe to make this comforting and flavorful dish:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 3/4 cup buttermilk

For the Sausage Gravy:

  • 1/2 pound ground breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste

For the Biscuits:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare the Dough:
    • In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
    • Add the cubed cold butter and use a pastry cutter or fork to cut the butter into the dry ingredients until it resembles coarse crumbs.
    • Pour in the buttermilk and mix until the dough comes together. Avoid overmixing.
  3. Shape and Bake:
    • Turn the dough out onto a floured surface. Gently pat the dough to about 1-inch thickness.
    • Use a biscuit cutter or a glass to cut out biscuits. Place them on a baking sheet lined with parchment paper.
    • Bake for about 12-15 minutes or until the biscuits are golden brown.

 

  1. Cook the Sausage:
    • In a skillet over medium heat, cook the ground sausage, breaking it into small pieces as it browns. Once cooked through, remove any excess grease, leaving about 2 tablespoons in the skillet.
  2. Make the Gravy:
    • Sprinkle the flour over the cooked sausage and stir well to coat. Cook for a minute, allowing the flour to cook slightly.
    • Slowly pour in the milk while stirring continuously to avoid lumps.
    • Cook the gravy, stirring occasionally, until it thickens to your desired consistency.
    • Season with salt and pepper to taste.

To Serve:

  • Split the freshly baked biscuits in half and place them on plates. Ladle the warm sausage gravy generously over the biscuits.

  • For fluffier biscuits, handle the dough as little as possible and work quickly.
  • The sausage gravy can be adjusted in thickness by adding more or less milk according to your preference.
