  • 8 pieces of chicken (a mix of thighs, drumsticks, or breasts)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon salt

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Vegetable oil, for frying

 

  1. Preparation:
    • Rinse the chicken pieces and pat them dry with paper towels. Season them generously with salt and pepper.
  2. Marinate the chicken:
    • Place the chicken in a large bowl or resealable bag and pour the buttermilk over it, ensuring each piece is well coated. Let it marinate for at least 1-2 hours, or ideally overnight in the refrigerator.
  3. Prepare the coating:
    • In a shallow dish, mix the flour with the salt, pepper, paprika, garlic powder, and onion powder.
  4. Coat the chicken:
    • Heat the vegetable oil in a large, heavy-bottomed skillet or pot to about 350°F (175°C) over medium heat.
    • Take each piece of chicken from the buttermilk, allowing any excess to drip off, and coat it thoroughly in the seasoned flour mixture. Make sure each piece is evenly coated.
  5. Fry the chicken:
    • Gently place the coated chicken pieces in the hot oil, being careful not to overcrowd the pan. Fry in batches if necessary.
    • Cook the chicken for about 12-15 minutes, turning occasionally, until they are golden brown and the internal temperature reaches 165°F (74°C) for safe consumption.
  6. Drain and rest:
    • Once cooked, transfer the fried chicken to a wire rack or paper towels to drain excess oil. Allow the chicken to rest for a few minutes before serving.
