How to make indian kheer

Indian Kheer, also known as rice pudding, is a delicious and creamy dessert that is often made during festivals and special occasions. Here’s a simple recipe to make Indian Kheer at home:

Ingredients:

  • 1 liter full-fat milk
  • 1/2 cup basmati rice, rinsed and soaked in water for 30 minutes
  • 1/2 cup sugar (adjust to your sweetness preference)
  • 1/4 cup mixed nuts (almonds, pistachios, cashews), chopped
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • 1 tablespoon raisins (optional)
  • 1 tablespoon ghee (clarified butter)

Instructions:

  1. In a heavy-bottomed pan or pot, bring the milk to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom of the pan.
  2. While the milk is coming to a boil, drain the soaked rice and set it aside.
  3. Once the milk starts boiling, lower the heat to medium-low and add the drained rice to the pan. Cook the rice in the milk, stirring occasionally to ensure it doesn’t stick to the bottom.
  4. Let the rice cook in the milk until it becomes soft and the milk thickens. This process can take around 30 to 40 minutes. Be patient and let the rice cook slowly in the milk to achieve the desired creamy consistency.
  5. While the rice is cooking, heat ghee in a separate small pan. Add the chopped nuts and sauté until they turn golden brown. If you’re using raisins, you can add them to the pan as well and let them plump up in the ghee. Set the nuts and raisins aside.
  6. Once the rice is cooked and the kheer has thickened, add the sugar, cardamom powder, and saffron strands (if using). Mix well until the sugar is fully dissolved.
  7. Turn off the heat and add the sautéed nuts and raisins to the kheer. Reserve some for garnish if desired.
  8. Allow the kheer to cool to room temperature. As it cools down, it will thicken a bit more.
  9. You can serve the kheer warm or chilled, depending on your preference. If you prefer it chilled, refrigerate it for a few hours before serving.
  10. Garnish with the reserved nuts and raisins before serving.
