how to make Indian Samosa

Absolutely! Samosas are a delightful snack with a delicious filling wrapped in crispy pastry. Here’s a recipe for making samosas:

Ingredients:

For the pastry dough:

  • 2 cups of all-purpose flour
  • 1/2 teaspoon of salt
  • 3 tablespoons of vegetable oil
  • Water (for kneading)

For the filling:

  • 3 medium-sized potatoes, boiled and mashed
  • 1/2 cup of green peas (fresh or frozen)
  • 1/2 cup of finely chopped carrots
  • 1/2 cup of finely chopped onions
  • 2 green chilies, finely chopped
  • 1 teaspoon of grated ginger
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander seeds (crushed)
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of garam masala
  • 1/2 teaspoon of red chili powder (adjust to taste)
  • Salt to taste
  • Vegetable oil (for frying)

Instructions:

  1. Pastry Dough:
    • In a mixing bowl, combine the all-purpose flour and salt. Mix well.
    • Add vegetable oil and rub it into the flour mixture until it resembles breadcrumbs.
    • Gradually add water, little by little, while kneading to form a smooth and pliable dough.
    • Cover the dough with a damp cloth and let it rest for 20-30 minutes.
  2. Filling:
    • Heat a tablespoon of vegetable oil in a pan over medium heat.
    • Add cumin seeds and crushed coriander seeds. Sauté for a minute until fragrant.
    • Add chopped onions, green chilies, and grated ginger. Sauté until the onions turn translucent.
    • Add the finely chopped carrots and green peas. Cook for a few minutes until they soften slightly.
    • Stir in the turmeric powder, garam masala, red chili powder, and salt. Mix well.
    • Add the mashed potatoes and combine all the ingredients thoroughly. Cook for another 2-3 minutes. Remove from heat and let the filling cool.
  3. Shaping and Frying:
    • Divide the dough into small lemon-sized balls.
    • Roll each ball into a thin oval or circular shape (about 6-7 inches in diameter).
    • Cut the rolled dough in half to form two semi-circles.
    • Take one semi-circle and fold it into a cone shape, overlapping the straight edges.
    • Fill the cone with a generous spoonful of the prepared filling, ensuring not to overfill.
    • Apply a little water on the edges of the cone and press them firmly to seal the samosa.
    • Repeat the process for the remaining dough and filling.
    • Heat vegetable oil in a deep pan or a fryer over medium heat.
    • Once the oil is hot, carefully slide 2-3 samosas into the oil and fry until they turn golden brown and crispy.
    • Remove the fried samosas using a slotted spoon and place them on a paper towel to drain excess oil.
    • Repeat the frying process for the remaining samosas.

There you have it! Freshly made samosas ready to be enjoyed. Serve them hot with chutney or ketchup. If you need any further assistance, feel free to ask. Enjoy your delicious snack!
