How to make malai chicken

Malai Chicken, also known as Creamy Chicken, is a rich and flavorful Indian dish made with succulent chicken pieces cooked in a creamy and aromatic gravy. Here’s a recipe to make Malai Chicken:

Ingredients:

  • 500 grams boneless chicken (cut into bite-sized pieces)
  • 1 cup thick yogurt (Greek yogurt works well)
  • 1/2 cup heavy cream
  • 2 tablespoons vegetable oil or ghee
  • 1 large onion, finely chopped
  • 2-3 green chilies, slit (adjust to your spice preference)
  • 1 tablespoon ginger-garlic paste (made from fresh ginger and garlic)
  • 1 teaspoon garam masala (a blend of Indian spices)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1 tablespoon kasuri methi (dried fenugreek leaves), crushed (optional but adds great flavor)
  • 2 tablespoons chopped coriander leaves (cilantro), for garnish
  • Salt to taste

Instructions:

  1. In a bowl, mix the yogurt, heavy cream, ginger-garlic paste, garam masala, turmeric powder, cumin powder, coriander powder, red chili powder, and salt to make the marinade.
  2. Add the boneless chicken pieces to the marinade and coat them thoroughly. Cover the bowl and let the chicken marinate for at least 1-2 hours in the refrigerator. This step allows the chicken to absorb the flavors and become tender.
  3. In a large pan or skillet, heat the vegetable oil or ghee over medium heat. Add the finely chopped onions and sauté until they turn golden brown.
  4. Stir in the marinated chicken pieces along with the marinade. Cook the chicken on medium heat until it becomes tender and is cooked through. Stir occasionally to prevent sticking.
  5. Once the chicken is cooked, add the slit green chilies and crushed kasuri methi (dried fenugreek leaves). Kasuri methi adds a unique flavor to the dish and is recommended if available.
  6. Adjust the seasoning, adding more salt or spices if needed.
  7. Garnish the Malai Chicken with chopped coriander leaves (cilantro) before serving.
