Moo shu pork is a classic Chinese dish known for its tender pork, crisp vegetables, and flavorful sauce. It is traditionally served with Mandarin pancakes or tortilla-like wrappers. Here’s a recipe to help you make moo shu pork:

Ingredients:

  • 1 pound (450g) pork tenderloin, sliced into thin strips
  • 4-6 large dried shiitake mushrooms, soaked in hot water until softened and sliced
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup sliced wood ear mushrooms (optional)
  • 3-4 green onions, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • Salt and pepper to taste
  • Mandarin pancakes or tortilla-like wrappers for serving

Instructions:

  1. In a small bowl, mix together soy sauce, hoisin sauce, oyster sauce, rice vinegar, and cornstarch mixture. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the pork slices to the skillet and stir-fry until they are no longer pink. Remove the pork from the skillet and set aside.
  4. In the same skillet, add another tablespoon of vegetable oil. Stir in the minced garlic, green onions, and sliced shiitake mushrooms. Cook for about 2-3 minutes until the mushrooms are tender.
  5. Add the shredded cabbage, carrots, and wood ear mushrooms (if using) to the skillet. Stir-fry for an additional 2-3 minutes until the vegetables are slightly softened.
  6. Return the cooked pork to the skillet and pour in the sauce mixture. Stir well to coat the ingredients evenly. Cook for another 2-3 minutes until the sauce thickens.
  7. Season with salt and pepper to taste.
  8. Serve the moo shu pork hot with Mandarin pancakes or tortilla-like wrappers. To eat, spoon some of the pork mixture onto a pancake or wrapper, roll it up, and enjoy!
