To make a delicious Mutton Rezala Pizza, blending the flavors of Mutton Rezala (a traditional Bengali dish) with a classic pizza, follow this recipe:

Ingredients:

For the Mutton Rezala:

  • 500g mutton (goat meat), bone-in, cut into small pieces
  • 1 cup yogurt
  • 1 large onion, finely sliced
  • 2 tablespoons ginger paste
  • 2 tablespoons garlic paste
  • 1 teaspoon white pepper powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon nutmeg powder
  • 1/2 teaspoon cardamom powder
  • 4-5 green chilies, slit lengthwise
  • Salt, to taste
  • 3 tablespoons ghee (clarified butter) or vegetable oil
  • Fresh cilantro (coriander) leaves, chopped for garnish

For the Pizza:

  • 1 prepared pizza dough (store-bought or homemade)
  • 1 cup pizza sauce or tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 onion, thinly sliced
  • Fresh cilantro (coriander) leaves, chopped for garnish
  • Olive oil (for brushing)

Instructions:

1. Prepare the Mutton Rezala:

  • In a bowl, mix yogurt with ginger paste, garlic paste, white pepper powder, cumin powder, coriander powder, nutmeg powder, and cardamom powder to form a marinade.
  • Marinate the mutton pieces in this mixture for at least 2 hours, preferably overnight in the refrigerator.
  • Heat ghee or oil in a pressure cooker or heavy-bottomed pot.
  • Add sliced onions and sauté until golden brown.
  • Add marinated mutton along with the marinade to the pot.
  • Add slit green chilies and salt to taste.
  • Cook the mutton on medium heat until tender and the sauce thickens. If using a pressure cooker, cook until mutton is tender (about 4-5 whistles).
  • Once cooked, garnish with chopped cilantro leaves. Set aside.

2. Preheat and Prepare Pizza Dough:

  • Preheat your oven according to the pizza dough instructions.
  • Roll out the pizza dough on a floured surface into your desired shape and thickness.

3. Assemble the Pizza:

  • Transfer the rolled-out dough onto a pizza stone or baking tray lined with parchment paper.
  • Spread pizza sauce evenly over the dough, leaving a small border around the edges.
  • Spoon the prepared Mutton Rezala over the sauce, spreading it evenly.
  • Arrange thinly sliced onions on top of the mutton.
  • Sprinkle shredded mozzarella cheese over the entire pizza.

4. Bake the Pizza:

  • Place the assembled pizza in the preheated oven.
  • Bake according to your pizza dough’s instructions or until the crust is golden brown and the cheese is melted and bubbly.

5. Serve and Enjoy:

  • Once baked, remove the pizza from the oven.
  • Optionally, drizzle a little olive oil over the pizza for added flavor.
  • Sprinkle chopped cilantro leaves on top.
  • Slice the Mutton Rezala Pizza into pieces and serve hot.
