Ingredients:

  • 1 whole duck (around 5-6 pounds)
  • 4 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon five-spice powder
  • Salt, to taste
  • Pancakes or steamed buns, for serving
  • Spring onions (scallions), thinly sliced
  • Cucumber, cut into matchsticks

Note: Traditional Peking Duck recipes often involve air-drying the duck for a few days to achieve crispy skin. However, this simplified version skips that step.

Instructions:

  1. Clean the duck thoroughly, removing any excess fat and innards. Pat dry with paper towels.
  2. In a small bowl, mix together honey, soy sauce, hoisin sauce, rice vinegar, five-spice powder, and a pinch of salt to create the marinade.
  3. Brush the marinade all over the duck, ensuring it is evenly coated. Make sure to brush some of the marinade inside the cavity as well.
  4. Preheat the oven to 350°F (175°C). Place the duck on a rack in a roasting pan, breast-side up.
  5. Roast the duck in the preheated oven for about 2 hours, or until the skin turns golden brown and crispy, and the internal temperature reaches at least 165°F (74°C).
  6. While the duck is roasting, prepare the accompaniments. Thinly slice the spring onions (scallions) and cut the cucumber into matchsticks.
  7. Once the duck is cooked, remove it from the oven and let it rest for a few minutes before carving.
  8. To serve, thinly slice the duck meat, including the crispy skin. Arrange the slices on a serving platter.
  9. Serve the Peking Duck with pancakes or steamed buns, along with the sliced spring onions and cucumber. Allow each person to assemble their own pancake or bun by spreading hoisin sauce on the pancake/bun, adding slices of duck, spring onions, and cucumber, then rolling it up.
