Ingredients:

  • 3 cups cooked rice (preferably cold, leftover rice)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mixed vegetables (such as carrots, peas, corn, and bell peppers), diced
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic and diced onion to the pan and sauté until the onion becomes translucent.
  3. Add the mixed vegetables to the pan and stir-fry for a few minutes until they are cooked but still slightly crunchy.
  4. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they are cooked through.
  5. Mix the cooked vegetables and scrambled eggs together.
  6. Add the cold cooked rice to the pan and break up any clumps with a spatula. Stir-fry the rice and vegetables together, ensuring everything is well combined.
  7. Drizzle the soy sauce and oyster sauce (if using) over the rice and continue stirring to evenly distribute the sauces.
  8. Season with salt and pepper to taste. Be cautious with the salt as the soy sauce already adds a salty flavor.
  9. Continue stir-frying the rice for a few more minutes until everything is heated through.
  10. Remove the pan from heat and garnish with chopped green onions.
  11. Serve the Chinese fried rice hot as a main dish or as a side dish with your favorite Chinese dishes.
